Almond Flax Mahi Mahi

It's day 3 of my 21 Day CrossFit Paleo Challenge, and it's time to get proactive on preventing food boredom. I want to have some fun with this! Since grains of any kind are not authorized under Paleo eating, I started brainstorming ways I could make some of my favorite meals sans grains. I hit the farmer's market in search of creative alternatives.

I've been craving white fish baked with Panko bread crumbs, but since I can't have whole wheat, I figured there had to be another option. Alas, I knew Bob's Red Mill wouldn't let me down! (look for this brand...love it!) I picked up some of Bob's Red Mill Flaxseed Meal, Almond Meal, Omega 3 free range organic eggs, wild caught mahi mahi, and some zucchini and squash to serve on the side.

Flaxseed Meal is just ground up flaxseeds, and is packed with fiber, ALA's (great source of Omega 3's), and is very high in antioxidants. Almond Meal is ground from raw almonds, and is low in carbohydrates and a good source of protein, fiber, vitamin E and magnesium. This recipe is packed full of nutrition and it couldn't be any easier to make!

Ingredients:
-8 oz. white fish (mahi mahi, tilapia, or flounder)
-1 egg
-1/4 cup almond meal
-1/4 cup flaxseed meal
-1/2 Tbsp. lemon pepper Mrs.Dash
-extra virgin olive oil non-stick spray


Step 1: Preheat oven to 350 degrees. Rinse fish and pat dry well with paper towels.

Step 2: Beat one egg in a shallow dish and place next to fish.

Step 3: In a separate shallow dish, combine 1/4 cup almond meal with 1/4 cup flaxmeal and 1/2 Tbsp. Mrs.Dash lemon pepper. (add up to 1 Tbsp. depending on how much you like lemon pepper) Set next in the "assembly line."

Step 4: Line a baking pan with foil and spray generously with extra virgin olive oil spray.

Step 5: Coat each piece of fish evenly on both sides with egg by turning in dish. Then coat fish evenly on both sides with almond/flax mixture by turning. Place fish in baking pan and bake in 350 degree oven for 12-15 minutes.

Double or triple the recipe as needed. Try grilling some zucchini and squash while this is baking to complete this Paleo friendly meal. If you aren't doing the Paleo thing, feel free to add some wild rice on the side. What a great gluten free alternative to using breadcrumbs. I can't wait to change up the spices in this mix and make homemade chicken nuggets next!
