Chicken Apple Rosemary Muffins

Let me start by saying that the pictures here do not give these tiny creations the justice that they truly deserve. Don't let it fool you! I guarantee if you make these, your life will never be the same.

I love rosemary! Although it's used to season chicken, more often it's used in foods that are packed with carbohydrates like breads, potatoes, and crackers. I've been longing for a way to use it more often (and in something other than just a whole chicken or with regular chicken breasts). Alas, the Chicken Apple Rosemary Muffin was born in my kitchen!

And of course, in true Emily fashion, they are super easy, low calorie, low cholesterol, high in protein, and contain only good wholesome complex carbs. The leftovers are portable, and the small portions make them adaptable to anyone's eating plan and caloric needs. (I eat 3 at a time)

Ingredients:

-1 lb. lean ground chicken (95% lean)
-1/2 cup old fashioned oats
-1/2 cup diced red onion
-1/2 cup diced gala apple
-1 snack cup natural no sugar added applesauce (1/3 cup)
-1 Tbsp. dijon mustard
-1 1/2 tsp. crushed dried rosemary
-1 tsp. salt


Step 1: Preheat oven to 425 F.

Step 2: In a medium mixing bowl, mix all ingredients well.

Step 3: Spray 12 muffin cups with evoo non-stick spray. Press mixture into cups evenly. Bake at 425 for 20 minutes.

That is it! I purposely used ground lean chicken instead of extra lean ground turkey breast, because the additional couple grams of fat here will make them moist. I like using the applesauce snack size cups instead of keeping a huge open container of applesauce in my fridge....less opportunity for random snacking. Great served with a heaping plate of steamed veggies, a sweet potato, or cranberry sauce.
