    Game Day Meatballs

    Football without wings is enough to make a grown man cry...until now! Regular chicken wings are typically cholesterol laden calorie bombs; Not so good for you. I'm so excited about this recipe, because now you can get the exact same taste completely guilt free. Game Day Buffalo & BBQ Meatballs make a great party appetizer for any occasion!

    Ingredients:

    -1 package extra lean ground turkey breast (1.25 lbs.)
    -heaping 1/2 cup Panko whole wheat bread crumbs
    -1/2 cup finely diced onion
    -2 egg whites
    -1/2 tsp. garlic salt
    -1/2 cup plus 2 Tbsp. sauce (wing, BBQ, or both)
    *Choose low fat, low sugar, all natural brands of sauce. Make a bbq batch and a buffalo batch to keep kids and adults both happy!

    (PREPARE "BETTER BLUE CHEESE DIP" PRIOR TO MEATBALLS IF YOU WANT A DIPPING SAUCE!)

    Step 1: Preheat oven to 350 F. In mixing bowl, knead together all ingredients except sauce.


    Step 2: Score meat mixture in half and separate into 2 bowls (if you choose to do both buffalo and bbq). To 1/2 of meat mixture, add 1 Tbsp. wing sauce, knead together well, and form into 2 inch size meatballs. To other 1/2 of meat mixture, add 1 Tbsp. BBQ sauce, knead together, and form into 2 inch size meatballs.


    Step 3: Spray two separate pans with non-stick cooking spray and line with meatballs. 9 in. cake pans or small square pans work well.


    Step 4: Bake at 350 F for 20 min. (Remember which are buffalo and which are BBQ!) Remove and drizzle each batch with an additional 1/4 cup sauce, turning to coat all sides. Bake another 5 minutes. Serve immediately. Makes 3 dozen.

    Serve with fresh celery, carrot sticks and blue cheese dressing. (I eat 4-6 meatballs with a heaping serving of veggies and 2 Tbsp. of Better Blue Cheese Dip). The BBQ meatballs are great by themselves, and the blue cheese dressing compliments the spicy buffalo variety and veggies perfectly!
