MelonBerry Mint Fruit Salad


Melons are in season and they are going cheap! I picked one up for the bargain price of $1 today and proceeded to go a little crazy in the rest of the produce department. I just love a colorful shopping cart!

If you are scared of carbohydrates and sugar contained in fruit, I beg you not to be. No one ever became obese from eating fruit alone. Fruit does in fact contain carbs and sugar, but they are naturally occurring and do not cause insulin spikes like refined carbohydrates and processed goods. Melons and berries are an especially good fruit choice, because they're so high in water content, vitamin C and potassium. They're also very low in calories per serving, so grab your mellon baller and go crazy!



Ingredients:
1 cantaloupe
1 honeydew melon
2 cups fresh blueberries
2 cups fresh blackberries
1 lime
2 Tbsp. agave nectar
fresh mint



Step 1: Cut melons in half and remove seeds with large spoon. Using a mellon baller, scoop flesh of melons in small bite size balls into large mixing bowl. Add blackberries and blueberries.

Step 2: Squeeze 1 Tbsp. of juice from a lime. (I love this juicer/measure combo...very handy)

Step 3: In small liquid measuring cup add 2 Tbsp. agave nectar and 1 Tbsp. fresh squeezed lime juice. Mix well and drizzle over fruit. Chop and add fresh mint (about 2 Tbsp.) Mix gently. Serve immediately or refrigerate to serve later. Garnish with fresh mint for some added flair. Makes 6 servings.
