Mango Salsa Ingredients:
-1 mango (diced into small pieces)
-1 Tbsp. freshly squeezed lime juice
-1/4 cup red onion (diced finely)
-1 jalapeno pepper (diced finely)
-2-4 Tbsp. chopped cilantro (depending on your taste)
Seafood Ingredients:
-2 filets (4-6 oz. each) white fish or salmon
-extra virgin olive oil non-stick spray
-Mrs.Dash Fiesta Lime or Lemon Pepper
Step 1: Prepare the mango salsa before you start the fish. Simply dice all ingredients and combine in a bowl with a spoon. Cover and set aside in refrigerator.
Step 2: Rinse and pat dry fish of your choice.
Step 3: Prepare fish with extra virgin olive oil spray and seasonings. (I used my Misto filled with extra virgin olive oil and Mrs. Dash Fiesta Lime.)
Step 4: Broil, grill or bake fish about 8-10 minutes, or until it flakes easily with a fork. Remove and top each filet with 1/2 cup mango salsa.
It's almost too good to be true how easy this dish is...and so healthy. Makes about 2 servings, so double or triple the recipe for extra. Once you taste this salsa, you're going to wish you'd made extra!
